just a couple of updates

The beer dinner menu is now posted in the upcoming events section and we've also added a couple of new cheeses.

While summer favorites like tomatoes and corn are no longer available locally, be sure to keep a look out for some of the regions fall and winter produce.  Look for specials featuring local winter squash, cabbage, cranberries, apples and potatoes, as well as our always locally sourced mushrooms and micro greens.

Fall Favorites

Oktoberfest specials were a hit again this year, with the sausages being as popular as ever.  Keep an eye out for more house-made sausages to be run as lunch specials in the upcoming weeks.

We'll have our annual beer dinner on October 27th.  This year we will be featuring beers from Stoudts brewery of Adamstown, PA.  Check back later this week for the menu.

Lastly, we'll be making a few menu changes on Saturday, which will include the always much anticipated return of "Fieldstone Chili"

are the dog days behind us?

We seem to have made it through the hottest part of the summer.  Now let's just hope hurricane season doesn't cause to many power outages :) 

In addition to hurricanes, the end of summer also unfortunately brings the end of local corn, tomatoes and fresh soft shell crabs.  I can assure you we'll continue to feature all of these products as long as they are available to us, but make sure you take advantage of them while you can as they'll only be around for a few more weeks.

tomatoes!

chicken fried chicken!

This Saturday will mark the annual return of one of our most popular seasonal dishes, chicken fried chicken.  We will be upgrading the dish this year, by using the same Lancaster county raised chickens that we've begun using for our other chicken entrees.  These chickens are fed an all natural, all vegetable feed and are totally antibiotic free.  We'll also be adding a grilled swordfish dish, featuring Florida day boat swordfish, as well as a new entree featuring one of my favorite cuts of beef, hanger steak.  Hope to see you this weekend!

Summer Wine Dinner

Father's Day

At Fieldstone, Father's Day means steak.  Well, steak and golf I guess :)  Come join us for our annual "Steak House" style menu additions this Sunday and you'll be sure to see what I mean.  We'll be featuring seven different varieties of steaks and chops.  In addition to what is available on our regular menu, there will be USDA prime beef, local beef, and dry aged beef, as well as veal and lamb.  Enjoy your steak as is, or choose from our list of tempting sides and toppings.  The full menu can be found here.  Lastly, don't worry if you're not a huge steak fan.  Our full regular dinner menu will be available as well.  Hope to see you there!

Summertime

This weekend marked the unofficial start of summer with the celebration of Memorial Day.  It was nice to see so many of you at our annual barbecue. I certainly hope everyone enjoyed themselves.  We had several comments about the jerk chicken, so I've added the recipe for our wet rub here.

We also introduced five new dinner entrees on Saturday.  The new menu can be found on the club website.  Come out and see what's new!

Spring/Summer Wine Tasting

Come join us for our second wine tasting of the season.  These informal gatherings provide you an opportunity to taste a wide variety of wines in a relaxed atmosphere.  Representatives will be available to answer any questions you may have about the wines and to help guide you in your selections.  Wines will be available for purchase at special member pricing, but there is no charge to attend the event.  No reservations are needed for the tasting, but the grill will fill up rather quickly due to the number of attendees that also stay for dinner, so be sure to reserve a table if you plan on dining with us this evening as well.  Hope to see you there!

In full swing......

The first week of May featured some great culinary events at the club.  May 4th was our first wine dinner of the season and  I've posted some photos in the gallery.  The Cinco de Mayo menu additions are usually one of our more popular "theme nights" and this year's turnout showed that to be the case yet again.  Over sixty members and guests turned out to enjoy fresh salsas, made-to-order guacamole, mushroom enchiladas, lobster tacos and more.

May is always an exciting month for us in the kitchen, as it typically marks the beginning of seasonally available local produce.  In addition to the local mushrooms and microgreens we use year round, this weekend we'll begin to have local asparagus, for the "asparagus trio" and more.  We'll be sure to keep you informed as more and more local products arrive on the menu.

pollo alla brasa

We've been getting a lot of positive feedback regarding our most recent menu changes.  While member favorites, like the Crab Louie and Salmon with creamed leeks, continue to be popular, two of our twists on classic ethnic dishes have garnered quite a bit of interest.  Our Shrimp & Crab Toast is a twist on the popular Cantonese dim sum dish, to which we add fresh lump crab meat and a refreshing lemon sweet and sour sauce.  The Pollo alla Brasa is our take on one of the national dishes of Peru.  We attempt to reproduce the complex flavor typically achieved by slow roasting chicken over charcoal, with the addition of a few key ingredients in our rub and a combination of cooking tempuratures.  I've added the rub to our recipe section along with a few pointers for trying the dish at home.  Feel free to continue to bring me your culinary questions and recipe requests.  I look forward to answering them.

spanish wine dinner


Our first wine dinner of the season will be held on Wednesday, May 4th at 6pm.  The dinner will feature seven wines from Spain, paired with our updated versions of classical dishes hailing from the same regions in which the wines were produced.  The menu can be found in the upcoming events section, as well as on the FGC website.  Be sure to call soon if you wish to reserve a table, as this event will have limited seating and is filling up quickly.

Spring is here.....

As the weather gets warmer and the grass gets greener, we have quite a few food and beverage events on the horizon to help usher in the golf season.  Easter is just days away and we actually have a few tables left for you last minute planners.  The menu can be found both on the Fieldstone website and in the upcoming events section of the blog.  Reservations can be made by calling (302) 658-2600, but be sure to act quickly, as the few remaining tables won't be around for long.  Also available on the FGC website are menus for Cinco de Mayo and Mother's Day.  I'm in the process of putting the finish touches on the menu for our May wine dinner which will be held on Wednesday May 4th.  We will be featuring the wines and cuisine of Spain.  Be sure to check back tomorrow for the delectable details.

*cheeses have also been updated.  and yes, the "chef's class" videos are in the works.  keep an eye out for our first installment, which will feature a recipe for one of our most popular soups.

exciting news!

I apologize for the recent lack of updates to the blog, but as many of you may know, I have been rather focussed on my daughter's recent medical issues.  I am happy to report that she is doing well.  I may post some info regarding her ordeal in the upcoming weeks, but I'd prefer to concentrate on getting some overdue f&b related items out to you for now.

recipes, etc.

I hope everyone enjoyed their Valentine's Day.  The club was sold out for dinner as usual , as over 60 members and guests were in attendence to enjoy our splendid four course menu.  One of our standard Valentine's Day dessert offerings is our flourless chocolate-hazelnut mousse cake.  I get several requests for the recipe each year, so I've decided to add it to the recipe section of the blog.  Let me know if you have any questions if you decide to try it.  Keep in mind that we're always happy to share our recipes, so be sure to let me know if you have any special requests.

preparing for the new season

While we all certainly try to take some of the yearly shutdown as an opportunity to recharge our batteries, much of the food and beverage staff are hard at work getting things ready for the reopening of the clubhouse.  We'll have new lunch and dinner menus, as well as many new additions to the wine list.  I've also posted the Valentine's Day menu in the upcoming events section of the blog.  Since Valentine's Day falls on a Monday this year, we'll be celebrating it on Saturday February 12th at the club.  We hope you'll join us for a romantic four course dinner featuring our kitchen's meticulously crafted dishes, with which an optional wine pairing will also be available.  Call (302) 658-2600 to make reservations early, as this event sells out each and every year.  We'll be open before you know it, and we're looking forward to seeing everyone back out at the club.

closeout sale!

As we prepare for our yearly shutdown, Fieldstone will host it's second annual "Close Down, Close Out" sale on Wednesday January 12th.  The sale will be set up in the dining room, and will feature hundreds of bottles of wine and golf shop merchandise marked down to be sold at clearance prices.  This is certainly an opportunity not to be missed!
